Yuzha is a traditional Chinese food in Diancheng town, Dianbai district, Maoming. It is a type of fried fish.
As Diancheng town is near the sea, local fishermen like to eat fish and peel oysters. The ingredients for yuzha are fresh fish and rice noodles. To make it, pour some boiling water into the rice noodles, stir a little, and then add cold water to make a paste. Pour peanut oil into a pot and boil, then roll the fish fillet with rice batter and fry in the pot. During frying, flip the fish and fry it until both sides are cooked thoroughly, then remove the oil. It is very crispy when it is hot.
Diancheng people who leave the town for work and come back to celebrate the Chinese New Year must buy yuzha to eat, so that the New Year will be considered complete. For them, food with hometown characteristics is the best way to celebrate the Spring Festival.
