Foshan Zhati is a traditional Han dish that has a history of more than a hundred years. The time-honored Dexinzhai brand is the most famous for the dish. It is made with two methods. One is to boil the whole pig trotter; the other is to cut the skin of the pig trotter, remove its hamstrings and bones, put fatty and lean pork in the skin, and then boil it. Since the latter is boiled when wrapped up with water weeds, it is called Zhati. It tastes fragrant and soft.
