Fried shrimp cakes (炸虾饼) are a special snack in the county-level city of Wuchuan in Zhanjiang, which is rich in seafood, especially shrimp.
It is very easy to make the snack: make batter by mixing rice flour and chopped green onions, couple that with a few fresh shrimp, and then fry until golden brown.
In order to retain the scent of shrimp, fried shrimp cakes are unseasoned. It's better to eat the cake wrapped in lettuce and dipping it in spiced salt.
